Smoked Salmon Breakfast Bruschetta Video

Ingredients

  • 1 whole wheat baguette, sliced on a bias into 8 slices
  • 2 cups egg substitute
  • 1/4 cup fat free half-and-half
  • 2 Tbsp low fat whipped cream cheese
  • 1 Tbsp chopped fresh chives
  • 4 oz smoked salmon, finely chopped

Directions

  1. Heat oven to 350 degrees.
  2. Place baguette slices on a cookie sheet and lightly toast in oven, about 7 to 8 minutes.
  3. Combine egg substitute, half and half and cream cheese in a bowl. Beat until frothy with mixer or whisk. Add chives and mix again.
  4. Spray a non-stick skillet with cooking spray and place over medium heat. When hot, pour egg mixture into skillet and let sit for one minute. Using a heat-resistant rubber spatula, scramble eggs. As eggs set, add salmon and salt and pepper (optional) to taste. Stir.
  5. Evenly distribute the egg mixture on baguette slices. Garnish with additional chives. Serve warm.
