Vegetarian Pizza Video

This delicious vegetarian pizza substitutes hummus for cheese to keep it low in fat but high in flavor. This recipe is perfect for a meal, appetizer or after school snack.

Ingredients

  • 1 large pizza crust
  • Cooking spray (olive oil flavor)
  • 1 cup zucchini sliced
  • 1 cup sliced yellow squash
  • 1/2 cup sliced red onion
  • 1/4 cup roasted red pepper chopped
  • 1 cup sliced mushrooms
  • 1 clove garlic minced
  • Oregano to taste
  • Black pepper to taste
  • 5 Tbsp original flavor hummus original

Directions

  1. Lightly coat pizza crust with cooking spray and heat in oven according to directions on packaging.
  2. In a skillet, sauté zucchini, yellow squash, red onion, roasted red pepper, mushrooms and garlic over medium heat about 4 minutes, or until onion is softened. Add oregano and black pepper to taste.
  3. Take pizza crust out of the oven and spread with hummus. Spread vegetables over top evenly. Heat for 1 additional minute. Serve immediately.
