Quinoa Soup Recipe

Chicken sausage and lean pork loin give this quinoa soup a satisfying boost of flavor and high protein. If you don’t want a spicy kick to your soup, just omit the crushed red pepper.

Ingredients

  • 1 Tbsp olive oil
  • 1/2 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 6 cups water
  • 3/4 cup quinoa, rinsed
  • 9 ounces cooked pork loin, cubed
  • 3 chicken sausages (3 oz each)
  • 1 chicken bouillon cube
  • 1 tsp black pepper
  • 1/4 tsp crushed red pepper

Directions

  1. In a medium saucepan, heat olive oil over medium-high heat until hot. Add onion and garlic, and sauté until onion is softened.
  2. Add remaining ingredients, reduce heat to medium-low and simmer for 15 minutes. Remove chicken sausages and cut into 1/4-inch slices.
  3. Return chicken sausage back to pot and simmer for 30 to 45 minutes. Serve hot.
