Split Pea Soup Video

This quick easy recipe for split pea soup can be made in less than 30 minutes. Low sodium vegetable broth makes this low calorie soup a heart healthy meal.

Ingredients

  • 2 Tbsp canola oil
  • 1 yellow onion, diced
  • 1 carrot, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 12 oz dried green split peas, sorted through
  • 6 cups low sodium vegetable broth, gluten free if needed
  • 1/4 lb lean, low sodium baked ham, diced
  • 1/8 tsp kosher salt
  • 2 Tbsp chopped fresh parsley
  • black pepper to taste

Directions

  1. In a large saucepan, heat oil over medium-high heat until hot. Add onion, carrot and celery and sauté until vegetables are softened but not browned. Add garlic and sauté about 30 seconds.
  2. Add split peas, broth and a handful of diced ham and stir. Cover and reduce heat to simmer for 20 minutes, stirring occasionally. Add salt, a tablespoon of parsley and black pepper, and stir to combine. Remove from heat and let cool slightly, about 5 minutes.
  3. Transfer soup to a blender and purée soup, in batches, until smooth. Return soup to saucepan and add remaining ham, reserving a few pieces for garnish. Serve warm, garnished with remaining ham and parsley.
