Lentil Chicken Salad Recipe

Packed with protein, this chicken salad recipe is a light and healthy alternative to mayo-based salads. Use it as hearty side salad or as the filling in lettuce wraps.

Ingredients

  • 1/3 cup lentils
  • 1 1/2 cups water
  • 2 Tbsp red wine vinegar
  • 1/4 cup green onions, chopped
  • 2 cup cooked chicken breast, diced
  • 1/2 cup celery, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup green bell pepper, diced
  • 2 ounces pimento, chopped
  • 2 Tbsp fresh parsley, chopped
  • 2 Tbsp fresh basil, chopped

Directions

  1. Rinse lentils in cold water and drain. Bring water to a boil in a saucepan over medium heat. Reduce heat and add lentils. Cover and simmer for about 20 minutes, or until lentil are just tender. Drain and refrigerate until cooled. (You can also just soak them in the refrigerator overnight.)
  2. Combine remaining ingredients in a small bowl and mix well.
