Garlic and Goat Cheese Pitas Recipe

Serve these scrumptious garlic and cheese pitas quartered as an appetizer before a light meal or serve as an entree with a large bowl of soup.

Ingredients

  • 8 garlic cloves
  • 1 tsp olive oil
  • Freshly ground black pepper, to taste
  • 4 cups fresh spinach
  • 2 whole wheat pitas
  • 4 oz low fat herbed goat cheese

Directions

  1. Preheat oven to 300°. In a ceramic dish, add garlic, olive oil and black pepper, and bake for 25-30 minutes or until fork tender.
  2. Meanwhile, in a large skillet, lightly mist non-stick cooking spray and cook spinach over moderate heat until just wilted.
  3. Arrange pitas on a baking sheet and toast them in oven for 1 minute. Cut pitas in half. In each half, spread 2 cloves garlic, one ounce of goat cheese and a quarter of the spinach. Add black pepper to taste. Serve warm.
