Chicken Stew Recipe

This healthy chicken stew combines very lean chicken breast, vegetables and whole grain wild rice to make a whole meal in one pot. Each serving of this healthy chicken stew has less than 220 calories.

Ingredients

  • 6 cloves garlic, peeled
  • 2 cups carrots, peeled and chopped
  • 1 pound skinless chicken breast, trimmed of fat and cut into 1 1/2 inch chunks
  • 4 cups low sodium chicken broth
  • 1 tsp dried thyme
  • 1/2 pound red bliss potatoes, washed and quartered
  • 1/3 cup wild rice
  • 2 cups green beans, trimmed
  • Freshly ground black pepper

Directions

  1. In a crock pot, combine onions, garlic, carrots, chicken, chicken broth and thyme.
  2. Heat on high until for about 1 1/2 hours. Add the potatoes, wild rice and green beans and cook for an additional 2 1/2 hours. Add freshly ground black pepper to taste, and serve hot.
