Crab Pasta Salad Recipe

Enjoy a lite but filling lunch with this low fat pasta salad with crabmeat. Honey adds an unexpected sweet touch. If you don’t have pasta shells, use rotini or penne.

Ingredients

  • 12 oz lump crabmeat, drained
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 Tbsp fresh lemon juice
  • 1 tsp honey
  • 1 Tbsp Dijon mustard
  • 1 Tbsp chopped fresh dill plus dill sprigs for garnish
  • 3/4 cup fat free sour cream
  • 1/2 cup light mayonnaise
  • 2 cups cooked whole wheat pasta shells
  • 2 cups cooked pasta shells
  • 12 lettuce leaves for serving

Directions

  1. In a large bowl, combine all ingredients except pasta and lettuce leaves. Add pasta, and toss gently. Serve on lettuce leaves and garnish with dill sprigs.
