Smoked Salmon and Asparagus Appetizer Recipe

Asparagus naturally contains a huge amount of vitamin C, and smoked salmon gives you healthy fats and oils. This app looks pretty on a plate and will be the talk of your next dinner party.

Ingredients

  • 12 asparagus spears
  • 4 oz smoked salmon, thinly sliced
  • Lettuce leaves, parsley, cherry tomatoes (garnish)
  • 1/4 cup plain, nonfat yogurt
  • 1/4 cup reduced-fat mayonnaise
  • 2 tsp honey mustard (or 2 tsp hot of Dijon mustard plus 1/2 tsp sugar)
  • 1 green onion, sliced thinly
  • freshly ground black pepper to taste

Directions

  1. Snap tough ends off the asparagus and steam them until tender. Set aside to cool.
  2. Combine all the ingredients for the mustard sauce.
  3. Wrap three spears of asparagus in one ounce of salmon. Repeat.
  4. Arrange on lettuce lined plate and garnish with cherry tomatoes and parsley. Serve with sauce on the side. Serves four as an appetizer. Larger portions make a lovely luncheon or supper main dish.
