Sautéed Greens Video

Your farmer’s market is brimming with heart healthy greens that make an easy side dish. When choosing kale, spinach or any greens, look for firm, deep-colored leaves and make sure you rinse them well.

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 2-1/2 cups greens (such as kale, collard greens, spinach and Swiss chard) stems removed and cut into bite-sized pieces
  • 1/4 cup water
  • 2 tsp fresh lemon juice
  • 1/8 tsp unrefined sea salt
  • pinch fresh ground black pepper

Directions

  1. In a skillet, heat oil over medium-high heat. Add greens and water and cook, stirring occasionally, for about 1 minute, or until greens are wilted. Remove from heat. Add lemon juice, salt and black pepper and toss gently to combine.
