Orange Glazed Parsnips Recipe

This orange glazed parsnip recipe is not only low fat, it’s cholesterol free as well!

Ingredients

  • 1/2 lb parsnips
  • 2 tsp vegetable oil
  • 1/8 tsp salt
  • 6 tbsp orange juice

Directions

  1. Peel parsnips and slice about 3/8-inch thick. If parsnips are large, cut slices in half.
  2. In a frying pan, heat oil over medium heat and add parsnips. Saute for 8 to 10 minutes, stirring and turning pieces over so that both sides brown. If they brown too quickly, lower the heat.
  3. When the parsnips are almost done, add salt and orange juice and cook. Continuing to turn pieces until almost all the juice has evaporated.
