Chicken Stew Recipe

This healthy chicken stew combines very lean chicken breast, vegetables and whole grain wild rice to make a whole meal in one pot. Each serving of this healthy chicken stew has less than 210 calories.

Ingredients

  • 1/2 medium onion, peeled and quartered
  • 6 garlic cloves, peeled
  • 2 cups chopped carrots
  • 1 lb boneless, skinless chicken breast, trimmed of fat and cut into 1 1/2-inch chunks
  • 4 cups low sodium chicken broth
  • 1 tsp dried thyme
  • 1/2 lb red bliss potatoes, scrubbed and quartered
  • 1/3 cup wild rice
  • 2 cups green beans, trimmed
  • Black pepper to taste

Directions

  1. In a slow cooker, combine onion, garlic, carrots, chicken, chicken broth and thyme.
  2. Cook on high for 1 1/2 hours. Add the potatoes, wild rice and green beans and cook for an additional 2 1/2 hours. Add pepper to taste, and serve hot.
