Spicy Shrimp Farfalle Recipe

Cooked in an aromatic white wine tomato sauce, this easy shrimp recipe is a great source of lean protein. Fanciful farfalle pasta dresses up the meal and all for only 300 calories a serving.

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup chopped onion
  • 1 garlic clove, chopped fine
  • 1/2 cup chopped green bell pepper
  • 2 cups whole tomatoes, chopped
  • 1 cup tomato sauce
  • 1/4 cup white wine
  • 1/4 cup chopped fresh basil
  • 1/4 tsp crushed red pepper
  • 1 1/3 cups uncooked whole wheat farfalle (bowtie) pasta*
  • 1 1/3 cups uncooked farfalle (bowtie) pasta*
  • 1 lb fresh shrimp, peeled and deveined

Directions

  1. In a large skillet, heat oil over medium heat until hot. Add onion, garlic and bell pepper and cook about 3 minutes, stirring occasionally, until onion is softened. Add tomatoes with juice, tomato sauce, wine, basil and red pepper and heat to boiling. Reduce heat and simmer about 20 minutes, stirring occasionally.
  2. Meanwhile using two medium-sized pots, cook whole wheat pasta and traditional pasta separately until al dente. (Whole wheat pasta will take slightly longer to cook.) Drain pastas and combine in one large bowl.
  3. Add shrimp to sauce mixture and cook about 3 minutes or until shrimp turn pink. Toss pasta with sauce and serve immediately.
  4. *We used a combination of whole wheat and traditional pasta, but you can use any variety including all whole wheat, or, one of the mixed grains pastas that are becoming widely available.
