Grilled Veggie Cheese Sandwich Recipe
Try this healthier version of an all American favorite: grilled cheese. Serve this tomato, fresh spinach and melted cheddar cheese sandwich paired with tomato soup for lunch or light supper.
Ingredients

- 8 slices light whole wheat bread
- 4 tsp olive oil
- 1/2 tsp garlic powder
- 4 oz reduced fat cheddar cheese
- 1/2 cup baby spinach leaves
- 4 slices of tomato (1/4-inch thick)
- 1 small onion, sliced
Directions

- Brush one side of each slice of bread with olive oil. Sprinkle bread with garlic powder. Layer 4 slices of bread with cheddar cheese, spinach leaves, tomato and onion. Top with remaining slices of bread, oil side up.
- In a grill pan, coated with nonstick cooking spray, grill sandwiches over medium heat, turning once, until golden brown and cheese is fully melted.
