Edamame Hummus Recipe

Sure to be a hit at dinner parties, this Japanese inspired appetizer uses edamame (soy beans), which are a great source of heart healthy omega-3 fats. It takes less than 30 minutes to make.

Ingredients

  • 8 egg roll wrappers
  • 1 Tbsp sesame oil
  • 2 tsp lemon juice
  • 1 1/2 Tbsp low sodium soy sauce
  • 1 Tbsp plus 1 tsp fresh ginger
  • 1 cup edamame
  • diced cucumber (optional)
  • diced tomatoes (optional)

Directions

  1. Using a pizza cutter, slice egg roll wrappers into fourths by cutting in an X pattern. Cover baking sheet with aluminum foil and coat with cooking spray. Place egg roll wrapper slices onto baking sheet, and spray tops with cooking spray. Broil 4 to 5 minutes until egg roll chips become slightly bubbly. Remove from oven.
  2. Puree sesame oil, lemon juice, soy sauce, and ginger in a food processor until minced. Add edamame and puree until smooth. (It should be the consistency of hummus.)
  3. Garnish with diced cucumber or tomato if desired. Serve with chips.
