Chicken and Brown Rice Casserole Recipe

Substitute brown rice for white rice in this healthier version of chicken casserole and add 5 times more fiber to your dish.

Ingredients

  • 1 cup uncooked brown rice
  • 4 roasted red peppers (rinsed and puréed)
  • 16 oz frozen broccoli
  • 1 cup red wine
  • 1 can (10.75 oz) reduced-fat, low sodium cream of chicken soup
  • 4 boneless, skinless chicken breasts (4 oz each)
  • Black pepper to taste
  • 1/4 cup part-skim shredded mozzarella cheese
  • 2 Tbsp grated Parmesan cheese

Directions

  1. Preheat oven to 400°. In a mixing bowl, mix brown rice, puréed peppers, broccoli, red wine and soup. Pour into a 3-quart shallow baking dish. Season chicken with pepper and press into mixture. Sprinkle with cheeses. Bake for 30 minutes, or until done.
