Ingredients

8 servings

  • 1 lb multi-grain spaghetti or other pasta
  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 sweet red pepper, chopped
  • 2 small zucchini, sliced
  • 1 lb mushrooms, quartered
  • Black pepper to taste
  • 1 tsp dried basil
  • 1/2 cup coarsely chopped pine nuts
  • 1/4 grated Parmesan cheese

Directions

In a large pot, cook pasta according to package directions, until al dente.In a skillet, heat the oil over medium-high heat until hot. Add the onion and sauté about 3 minutes, or until it is softened. Add the garlic and vegetables, pepper and basil and toss to combine. Cover, reduce heat to medium, and cook about 10 minutes, or until the vegetables are tender.Drain cooked pasta and add it to the vegetables. Add 1/2 cup of the pine nuts and toss to mix well. Serve, topped with remaining 1/2 cup of pine nuts.
