Ingredients

2 servings

  • 2 Tbsp Dijon mustard (gluten free if needed)
  • 2 Tbsp lemon juice
  • 1 to 2 garlic cloves, minced
  • 1 tsp dried rosemary or 4 fresh rosemary sprigs
  • Black pepper to taste
  • 2 boneless, skinless chicken breast halves (4 oz each)

Directions

In a shallow dish, combine all ingredients except the chicken. Add chicken, turning to coat well. Cover and marinate for at least 1 hour in refrigerator, or 20 minutes at room temperature.Preheat oven to 375°.Cover and bake for approximately 25 minutes, or until cooked through.
