Soba Noodle Salad Recipe

A healthy dose of vegetables and savory sauce make this salad a meal

Summer salads are a wonderful way to include vegetables in your diet.


“Eating nutrient-packed vegetables regularly can boost your immune system, improve your heart health, and give you important vitamins and minerals, such as vitamin K in asparagus and beta-carotene in carrots,” says Yuan Shao, MD, a primary care physician at Scripps Clinic Torrey Pines.


This Soba Noodle Salad is filled with fresh seasonal ingredients and is an excellent choice if you are planning a picnic, entertaining at home, or just looking for a new lunch idea.

Soba Noodle Salad (serves two)

1/2 cup carrots, shredded

1/2 cup watermelon radish, sliced and quartered

1/2 cup asparagus tips, blanched

2 green onions, thinly sliced on a bias

1/4 cup peanuts, chopped

1/2 pound soba noodles, blanched

1 1/2 tablespoons sesame dressing (see below)

1 1/2 tablespoons peanut sauce (see below)

1 teaspoon black and white sesame seeds, toasted


Mix all ingredients together and top with more toasted sesame seeds, chopped peanuts, and green onions.

Sesame Dressing

2 tablespoons rice vinegar

2 tablespoons low-sodium tamari

1 teaspoon ginger, minced

1 1/2 tablespoons sesame oil

1 1/2 tablespoons peanut oil

1/2 tablespoon sesame seeds, toasted


Combine all ingredients in a bowl and set aside.

Peanut Sauce

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons rice vinegar

2 tablespoons lime juice

1 tablespoon low-sodium tamari

1 teaspoon ginger, minced

1 teaspoon Sriracha


Place all ingredients in a pot and simmer until mixed well. Cool and set aside.
