Cabbage and Pepper Slaw Recipe
Try this colorful, cool and crisp cabbage and red pepper slaw instead of hig-fat cole slaw, potato salad or macaroni salad.
Ingredients

- 1/2 cup apple cider vinegar
- 1/4 cup water
- 3 Tbsp sugar
- 1/4 tsp celery seed
- 1/4 tsp black pepper
- 2 tsp olive oil
- 4 cups shredded cabbage
- 4 cups thinly sliced red bell peppers
- 1 cup thinly sliced onion
Directions

- In a small saucepan, boil vinegar, water, sugar, celery seed and black pepper until sugar dissolves. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat.
- In a very large nonstick saucepan, heat the oil over medium-high heat until hot. Add the cabbage, bell peppers, and onion and toss gently. Sauté, tossing often, until vegetables begin to soften and cook down, 6 to 7 minutes.
- Stir in the vinegar mixture and bring to a boil. Cover, reduce the heat and toss occasionally until the vegetables are very tender, 6 to 8 minutes.
- Serve chilled.
