Healthy Mashed Potatoes Recipe

Most mashed potatoes call for loads of salt and butter. This heart healthy recipe preserves that classic, creamy flavor without the added fat and sodium.

Ingredients

  • 1-1/2 pounds Yukon Gold potatoes, quartered
  • 2 large carrots, peeled
  • 2 Tbsp margarine
  • 1/4 cup 2% milk
  • 1/2 tsp salt
  • 1/4 cup fat free sour cream*
  • freshly ground black pepper

Directions

  1. Thoroughly wash potatoes and add to large pot. Add water to cover and bring to a boil. Reduce heat and simmer, covered, for about 15-20 minutes. Add carrots and simmer for 5 more minutes, until vegetables are tender. Drain.
  2. Melt margarine over medium heat and add milk and salt.
  3. Place vegetables in a large mixing bowl and add milk mixture. Beat with a hand mixer and add sour cream. (Be careful not to overbeat as potatoes will become gluey.) Add freshly ground black pepper to taste.
  4. *For Gluten Free: Check label to be sure this product does not use a wheat-based starch.
