Spanish Rice Recipe

Packaged rice is too high in sodium! This spicy rice recipe uses brown rice and fresh vegetables for added nutrients.

Ingredients

  • 1/2 cup white onion, chopped
  • 1 1/2 cup brown rice
  • 1 small green bell pepper, diced
  • 2 celery stalks, diced
  • 2 jalapeno peppers, deseeded and diced
  • 2 cups tomatoes, deseeded and diced
  • 3 cups water
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper

Directions

  1. In a pot over medium heat sauté onion, garlic in cooking spray until onion is translucent. Add water, rice, bell pepper, celery, jalapenos, tomatoes to onion and garlic.
  2. Bring mixture to a boil, reduce heat and add chili powder, cumin, cayenne and coriander.
  3. Continue to simmer for 50 minutes.
