Salmon Cakes Recipe

These flavorful salmon cakes are full of protein. Try this creative diversion from everyone’s favorite: crab cakes. Vary their portion size for appetizers or entrees accordingly.

Ingredients

  • 1 - 7 ounce can of salmon, drained
  • 1/2 cup red pepper, chopped
  • 1/4 cup green onions, chopped
  • 2 large garlic cloves, minced
  • 2 egg whites
  • 1 Tbsp lemon juice
  • 1 cup cornflakes, smashed
  • 3 tbsp light mayonnaise
  • 1/2 tsp lemon pepper

Directions

  1. Add all ingredients together and mix thoroughly. Divide mixture into eight portions. Roll into balls and flatten. In a skillet sprayed with cooking spray, cook salmon cakes over medium heat until golden brown. Serve immediately with a lemon wedge.
