Salmon Cakes Recipe
These flavorful salmon cakes are full of protein. Try this creative diversion from everyone’s favorite: crab cakes. Vary their portion size for appetizers or entrees accordingly.
Ingredients

- 1 - 7 ounce can of salmon, drained
- 1/2 cup red pepper, chopped
- 1/4 cup green onions, chopped
- 2 large garlic cloves, minced
- 2 egg whites
- 1 Tbsp lemon juice
- 1 cup cornflakes, smashed
- 3 tbsp light mayonnaise
- 1/2 tsp lemon pepper
Directions

- Add all ingredients together and mix thoroughly. Divide mixture into eight portions. Roll into balls and flatten. In a skillet sprayed with cooking spray, cook salmon cakes over medium heat until golden brown. Serve immediately with a lemon wedge.
