Spanish Tortilla Recipe

A variation on an egg white omelet, this quick and easy recipe has just three ingredients and can be made in less than 20 minutes. Great for breakfast or brunch.

Ingredients

  • 3 medium onions, chopped
  • 14 egg whites
  • 7 oz pork loin, cubed

Directions

  1. Cover a saute pan with cooking spray and saute onion over medium heat until translucent. Remove and set aside
  2. Spray pan cooking spray and add pork until cooked through, about 5 minutes.
  3. Beat egg whites lightly in a bowl without letting them stiffen. Add onion and pork and stir well. Add mixture to pan and cook tortilla until firm, flipping once. Serve hot.
