Potato Soup Recipe

Serve this rich and creamy potato soup as an appetizer to a winter dinner party or alongside a healthy salad for lunch. It is full of flavor but light on calories with only 102 calories per cup.

Ingredients

  • 5 garlic cloves, minced
  • 1 1/2 cups chopped celery
  • 1 cup sliced leeks
  • 4 1/2 cups low sodium chicken broth
  • 6 large baking potatoes, peeled and chopped
  • Black pepper to taste

Directions

  1. Lightly coat a large pot with nonstick cooking spray and place over medium-high heat. Add garlic, celery and leeks and sauté until tender. Add chicken broth, potatoes and pepper. Cover pot and bring to a boil over high heat. Reduce heat and simmer, uncovered, stirring occasionally, until potatoes are very tender, 15 to 20 minutes. Remove from heat and purée mixture in a food processor or blender. Serve immediately.
