Chunky Chicken Avocado Wrap Recipe

From Hanover Hospital in Pennsylvania comes this filling lunch recipe full of heart healthy monounsaturated fats. Avocados (in lieu of mayo) create a unique chicken salad recipe.

Ingredients

  • 2 small ripe avocados, mashed
  • 1 Tbsp lime juice
  • 1 small red onion, diced
  • 2 plum (Roma) tomatoes, seeded and diced
  • 12 oz chicken breast, cooked and diced
  • Freshly ground black pepper, to taste
  • 1 cup romaine lettuce, chopped
  • 4 low carb whole wheat tortillas (10-inch size)

Directions

  1. In a medium bowl, mix avocado, lime juice, onion, tomato, chicken breast and pepper until well combined.
  2. Place 1/4 cup shredded lettuce in each tortilla. Top with chicken and avocado mixture. Roll up, slice in half on a bias and serve.
