Carrot and Raisin Salad Recipe

Try this salad for a change. Using pineapple, carrots and raisins make this salad colorful, but also perfect for summer. There are only 70 calories a serving, so go for seconds.

Ingredients

    • 3 medium carrots, peeled and shredded
    • 1/4 cup raisins
    • 1/3 cup diced fresh pineapple
    • 1/4 cup fat free plain yogurt

Directions

    1. In a medium bowl, combine all ingredients. Refrigerate for 2 hours, covered, stirring occasionally. Serve chilled.
